Learn the real secrets of family recipes that have been used in everyday cooking for generations at the Borgo Storico Seghetti Panichi, a 17th century villa and converted former stable surrounded by beautiful gardens in the hills of Le Marche. Beatrice del Balzo Panichi will introduce the traditional dishes of the region, featuring fresh seasonal vegetables (some of them grown in the Borgo's kitchen garden), a variety of meats, and fresh fish from the nearby Adriatic Sea. Vincisgrassi (Le Marche's lasagna), Olive all'ascolana (stuffed olives), and Pollo 'n cip e ciappe (chicken with tomatoes, peppers and olives) are some of the recipes featured. Classes are held in the morning, with the food prepared, combined with local wines, served for lunch. A coffee break with biscuits and cakes offers a moment of relaxation and pleasant conversation during the class. Wine tasting and a guided tour of the family cellar; an afternoon excursion to the medieval town of Ascoli Piceno; and your choice of an excursion to the local factory outlets or to the perfectly preserved medieval hamlet of Offida, known for its lace work pillows, complete the package.

Day 1: Arrival at the hotel. Meet the Panichi family for a tour of the Borgo and wine tasting in the family cellar. Welcome dinner at the restaurant La Quintana.

Day 2: Breakfast at the hotel. The first cooking lesson, Introduction to Markesan Cuisine, will be conducted by Beatrice del Balzo Panichi. After lunch there will be time to relax followed by an excursion to nearby Ascoli Piceno, including entry to three historical museums. Dinner at the Borgo.

Day 3: Breakfast at the hotel. Second cooking lesson followed by lunch. In the afternoon, visit nearby Offida and/or local factory outlets. Dinner at the Borgo.

Day 4: Breakfast and departure.
