Learn the flavors of Ligurian cooking at the beautiful Excelsior Palace Hotel overlooking the Ligurian Coast. Ligurian cuisine is typically low fat and healthy, based mainly on fish and on products growing on the coast, including basil, nuts and capers. Most dishes are seasoned with local olive oil, such as a "Pesto" sauce of basil, garlic, nuts and olive oil. Learn to make "Pansoti", a ravioli filled with local herbs, and "Cappon Magro", Liguria's famous starter course made with a variety of fish and shellfish and vegetables seasoned with mixed herbs, olive oil and garlic.
Day 1: Arrival at the hotel. Evening at leisure.
Day 2: Breakfast at the hotel. Day at leisure to relax on the beach, or perhaps indulge in the hotel's SPA. Or, take the cableway to Montallegro for a breathtaking view of the Portofino Coast.
5:30 p.m.: Cooking lesson featuring pesto, walnut sauce and pansoti. Dinner at the hotel consisting of the dishes prepared during the cooking lesson.
Day 3: Breakfast at the hotel. The day is free to explore the area: visit the enchanting village of Portofino, or enjoy a trip to the Cinque Terre.
5:30 p.m.: Cooking lesson to prepare Cappon Magro and Burrida di pesce. Dinner at the hotel consisting of the dishes prepared during the cooking lesson.
